Quick and Easy Family Meals Using Pantry Staples: My Top 3 Go-To Recipes for Busy Nights

In this post, I’ll share three of my all-time favorite family-friendly recipes: quesadillas, three-bean soup, and shrimp pasta. Each dish relies on common ingredients, takes minimal effort to prepare, and is perfect for those hectic evenings.


Quesadillas

Quesadillas are a fun and adaptable meal that my family loves. They come together quickly and can be made to suit individual tastes using just a few ingredients.


Ingredients:


  • 4 large flour tortillas (homemade or store bought)

  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)

  • 1 cup canned beans (black, pinto, or kidney), drained and rinsed

  • Optional toppings: salsa, sour cream, avocado, or leftover veggies like bell peppers or onions


Instructions:


  1. Heat a skillet over medium heat.


  2. Place one tortilla in the skillet and sprinkle half of the cheese evenly on one half of the tortilla.


  3. Add a layer of beans along with any optional veggies you prefer. Top with the remaining cheese.


  4. Fold the tortilla in half, cooking for about 2-3 minutes until golden brown and the cheese melts. Flip and cook the other side for another 2-3 minutes.


  5. Remove from heat, slice into wedges, and serve with salsa and your favorite toppings.

  4. Bring to a simmer, cover, and let it cook for about 20 minutes to blend the flavors.


  5. Season with salt and pepper to taste. Serve hot with garnishes.
