Homemade Spaghetti and Meatballs

A plate of homemade spaghetti and meatballs offers an unparalleled sense of comfort. Whether I'm managing a hectic schedule or seeking a meal that evokes nostalgia, this timeless recipe consistently lifts my spirits. This was one of the first meals I learned to cook as a teen and today it is one of my children's favorite meal. Today, I'm excited to share my lighter version of this cherished dish, featuring chicken as the primary protein. It's easy to make, fulfilling, and bursting with flavor!


Why Make It Yourself?


Creating homemade meals has numerous benefits. First and foremost, you control the ingredients, which means you can ensure everything is fresh and wholesome. Cooking from scratch is also therapeutic. Kneading dough, shaping meatballs, and allowing the tomato sauce to simmer creates moments of joy and connection with the food you serve.


According to a survey by the Food Marketing Institute, 90% of families believe that cooking at home helps them eat healthier. And when it comes to pasta, fresh is king. Homemade pasta has a tender texture that store-bought options just can’t match. It’s absolutely worth the effort!


Ingredients


For the Chicken Meatballs:


  • 1 pound ground chicken

  • 1/2 cup breadcrumbs (preferably homemade)

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley

  • 1 egg

  • 2 cloves garlic, minced

  • Salt and pepper to taste


For the Spaghetti:


  • 2 cups all-purpose flour (plus extra for dusting)

  • 3 large eggs

  • A pinch of salt


For the Tomato Sauce:


  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 teaspoon dried oregano

  • Salt and pepper to taste


Crafting the Chicken Meatballs


Let’s start by making those delicious chicken meatballs! In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, and pepper.


Mix these ingredients well until everything is combined. I recommend using your hands for this; it’s messy but a lot of fun! Once mixed, form the mixture into meatballs about the size of a golf ball. Place them on a lined baking sheet.

Now, preheat your oven to 400°F (200°C). Bake the meatballs for about 20-25 minutes, or until they are cooked through and lightly browned. They should reach an internal temperature of 165°F (74°C) for safety.


Making Fresh Pasta


While the meatballs bake, let’s prepare fresh pasta!


Start by forming a mound of flour on a clean surface and make a well in the center. Crack the eggs into the well and sprinkle a pinch of salt over them. Gradually mix the flour into the eggs with your fingers until a dough forms.


Knead the dough for about 10 minutes until it's smooth and elastic. If it feels sticky, don’t hesitate to add a bit more flour.


Let the dough rest for 30 minutes, covered with a damp towel. This resting time allows the gluten to relax, making it easier to roll out later.


When you're ready, use a pasta machine or a rolling pin to thinly roll the dough. Cut it into spaghetti shape, and dust it with flour to prevent sticking.


Preparing the Tomato Sauce


With your meatballs cooking and your pasta dough resting, it's the perfect time to prepare the tomato sauce!


In a large saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion becomes translucent, roughly 5 minutes. Then, add the minced garlic and cook for another minute.


Pour in the crushed tomatoes and sprinkle in the oregano, salt, and pepper. Lower the heat and let it simmer for about 20 minutes. As it cooks, the sauce will thicken and fill your kitchen with a delightful aroma.

Cooking the Pasta


Once the sauce is ready and the meatballs have finished baking, it’s time to cook the pasta! Bring a large pot of salted water to a rolling boil and add in your fresh spaghetti. Cook for about 2-3 minutes until al dente. Fresh pasta cooks far quicker than dried, so keep an eye on it!


When done, drain the spaghetti and toss it in the sauce, ensuring every strand is thoroughly coated.


Plating Your Dish


To plate, serve a generous portion of spaghetti topped with a few chicken meatballs. Finish with a sprinkle of extra Parmesan cheese and a garnish of fresh parsley.


The pairing of savory meatballs, rich tomato sauce, and fresh pasta creates a flavor explosion that’s utterly delightful.
